Recipe for Meatloaf with
Ritz Crackers.
Ingredients for the  Meatloaf:
• 1/3 cup ketchup
• 1/3 cup tomato sauce - canned tomatoes
is fine
• 36 RITZ Bacon Flavored Crackers (or not Bacon)
• 1 lb. meatloaf mix (1/3 each: ground pork, beef and veal - you can substitute here if you want)
• 3/4 cup shredded sharp cheddar cheese
• 1 egg
• 1 jalapeño pepper
Ingredients for the side salad:
• Arugula - a bunch
• 6 roma or small tomatoes
• 1 avocado
• ½ red onion
• ¼ cup fresh cilantro
• I lemon
• Olive Oil
Instructions for the Meatloaf:
1. Pre-heat it to 400F.

2. Line a 9x5 inch loaf pan with foil. The ends of the foil should just peak over the edge of the pan.
3. Put some oil on the foil.
4. In a medium sized bowl combine 36 finely crushed ritz crackers, the ketchup and tomato sauce.
5. Keep 2 tablespoons of the tomato sauce to the side.
6. Beat the egg in a separate cup.
7. Finely chop that jalepeno pepper.
8. Shred the cheese to get ¾ cup.
9. Take that bowl with the crushed crackers, add the meat, egg, cheese, jalapeno and salt and pepper to taste.
10. Put the whole mixture in the loaf pan.
11. Spread the ketchup sauce you kept to one side on top. Put it in the oven and play some more music!
Instructions for the side salad:
1. Cut up the tomatoes to whatever size you want.
2. Slice the red onion pretty thin.
3. Slice it longways, all the way around. Give it a twist to get it apart. take a knife, and hack it into the pit. Once it’s lodged in, give it a twist and out comes the avocado. Slice the inside and scoop out with a spoon.
4. Add everything to a large salad bowl.
5. Slice the cilantro.
6. Cut the the lemon in half.
7. Add the cilantro and lemon as desired along with some olive oil and salt and pepper.
8. Toss the salad and start dancing.
